Keep. Whether or not it is currently manufactured is irrelevant. There are numerous early-20th sources covering this, including a lengthy entry over several pages in The Book of Cheese]. As to whether it is still made, the closest I could find was an entry in The Complete Book of Cheese] which mentions it disparigingly in the past tense, but without actually saying it is now unobtainable. The name refers to the place Isigny and that's now protected as an AOC/PDO in Europe. See beurre d'Isigny and Isigny Sainte-Mère. This might make it difficult for American producers to use the name. Andrew D. (talk) 20:33, 22 September 2018 (UTC)[reply]
