The information in this article seems pretty relevant, so I don't think that removing information is absolutely necessary. There is no information here that appears opinionated or written in a tone that is inappropriate for Wikipedia.
This article is pretty short, and could probably benefit from adding information. Lee did some work with COVID-19 relief, so that could be added to her Career section. I think it would also be nice to add images of some of BCD Tofu House's popular dishes, especially soondubu-jjigae, which is mentioned in the article. You can also talk about how the LA branch is closing because of COVID-19.[1]
It would be nice to find more information on her, but there doesn't seem to be much because coverage only increased once she passed away. Most of the popular sources on her have been linked in the bibliography. You could always add more information about BCD Tofu House. Please let me know if you end up working on this article.
